Jim and I bought a new car last weekend; we'd not bought a new one in YEARS. Funny, we accidentally both dressed in orange-hued shirts, so were very matchy-matchy. Then, we ended up buying an orange car, so we were matchy-matchy-matchy. The entire dealership was laughing. Channeling our Hallowe'en jack-o-lantern and Thanksgiveing pumpkin pie, I guess... For the recipes this week, first up, a classic Cajun dish, seafood boulettes in a rich tomato gravy. Cajuns demand it be served over hot fluffy white rice; my mom would've made biscuits for the tomato gravy. Next, smothered chicken and rice, which brings back memories of childhood. It was a fast and cheap meal always good for a weeknight dinner, and my mom made the best. And finally, one of those recipes you don't cook too often if you're paying attention to your waistline, but SO worth it on a cheat day. Zea's roasted corn grits. Zea's is a restaurant chain around New Orleans, one of their specialties is rotisserie chicken, and this is the perfect side. I just might make it for a Thanksgiving or Christmas side this year. Seafood Boulettes in Tomato Gravy This recipe is from Cajun Cuisine, published in 1985, still in print, and considered to be one of the bible of Cajun cooking. It simmers low and slow, and would traditionally be served of hot fluffy white rice. |

Smothered Chicken and Rice My mother made a version of this dish often, and it was one of my absolute favorites. Ultimate comfort food for me, and a lot less fiddly than risotto, although I make that on occasion and love it too. |

Zea's Roasted Corn Grits This is one of those recipes where you do NOT want to consider the nutritional analysis. I think I'm going to put in in my file of Thanksgiving dishes ideas, because it scales up easily and the grits can be kept warm in a slow cooker. |
