Bring a sauce pot full of water to a boil.Place ice cubes in a bowl and set aside. Core your fresh tomatoes and score lightly with a knife. Immerse your tomatoes in boiling water for 20 - 30 seconds or until skin begins to peel back. Remove tomatoes with slotted spoon and immerse in ice water. When cold remove from water and peel off the skins. Cut tomatoes in half and remove seeds. Roughly chop and reserve flesh.
