The gills underneath a mushroom cap open as the mushroom ages, and older mushrooms are have a richer, fuller flavor than younger mushrooms. So if you're going for mild mushroom flavor, look for tight, closed gills; if you're looking for big, rich mushroom flavor, look for those that are open.
