Applesauce Bread With Raisins and Walnuts

Makes 1 loaf

Ingredients: 
  • 2 cups all-purpose flour
  • 1/4 cup dark brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon vanilla
  • 8 tablespoons (1 stick) butter, softened
  • 1 cup applesauce
  • 2 eggs
  • 1 cup raisins
  • 1/2 cup walnuts, chopped

Method: 

Preheat oven to 350˚F.
Combine all the ingredients except the raisins and nuts. Mix well until blended. Stir in the raisins and nuts. Pour into a greased and floured 8x4x3-inch loaf pan. Bake 1 hour to 1 hour 15 minutes or until toothpick inserted in center comes out clean.

Remove from oven and allow to cool 15 minutes in pan. Loosen sides of loaf from pan; remove from pan to wire rack. Cool completely, about 1 hour, before slicing.
