Cajun Stuffed Oysters

Serves 12 stuffed oysters

Ingredients: 
  • 1 lb fresh pork sausage, removed from casing
  • 1 pint oysters and oyster liquid, chopped
  • 1/2 cup parlsey, choppe
  • 1/2 cup green onion tops, chopped
  • bread crumbs from 8 slices toasted bread
  • 1/4 cup butter, melted
  • lemon juice from 1 lemon
  • 12 oyster shells

Method: 

Brown sausage slowly in a heavy pot; ad oysters, parsley and green onion tops and cook on medium heat for 10 minutes

Add bread crumbs (you may not need all of them), butter and lemon juice and mix well. If not moist enough, add some oyster liquid.

Add salt and pepper if necessary and stuff mixture into the oyster shells; place in a shallow pan and bake at 350˚F for 25 minutes.

Note: If sausage is highly seasoned, it might not be necessary to add any salt and pepper.
