Creamy Shrimp Salad in Tomato


Recipe adapted from Cajun Cuisine

Serves 6

  • 3/4 cup top-quality mayonnaise
  • 1 teaspoon salt, or to taste
  • 2 teaspoons dry mustard
  • 6 green onions, diced
  • 1 cup finely diced red and green peppers
  • 1 teaspoon paprika
  • hot sauce to taste
  • 2 pounds boiled peeled shrimp
  • 6 medium tomatoes
  • lettuce leaves, parsley, for garnish

Whisk together mayonnaise, salt, mustard, onions, peppers, paprik, and hot sauce; set aside for 30 minutes for flavors to meld. Taste and adjust seasoning. Combine with shrimp in a non-reactive bowl and refrigerate for 4 to 6 hours. To serve, slice the top off the tomatoes and hollow them out; fill with marinated shrimp salad, serve on a bed of lettuce, and garnish with parsley.
