Garlic Butter Shrimp

Serves 4

Ingredients: 

Garlic Butter Shrimp

  • 1 pound peeled and deveined large raw shrimp*' with tails on (2 pound unpeeled whole shrimp)
  • 3 tablespoons extra-virgin olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 3 teaspoons finely minced garlic or 
  • ¼ cup chardonnay, or other dry white wine*2
  • Lemon wedges, to serve
  • Hot French bread, for serving

 

Garlic Butter Sauce

  • 3 tablespoons unsalted butter, cut into ½ inch cubes
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped parsley
  • 2 tablespoons of minced garlic or to taste

Method: 

Marinate-Toss the shrimp with 1 tablespoon of the olive oil and the salt and pepper, then set aside for 20 minutes. 

Cook shrimp-Heat 1 tablespoon of the oil in a large nonstick skillet over high heat. Using tongs, place half the shrimp in the pan and sear each side for 45 seconds, then transfer to a plate. Add the last 1 tablespoon of oil, then sear the remaining shrimp for 45 seconds on each side. 

Garlic butter sauce-Add the butter and lemon juice and swirl in the pan. As soon as the butter has melted, add the parsley, then toss quickly to coat the shrimp. Tip the shrimp and sauce onto a serving plate.

Serve-Add the lemon wedges on the side (if using) and serve immediately with bread for mopping up that garlic-shrimp butter (seriously, the highlight!).
