Seared Pork Chops with Carmelized Apples and Onions

Serves 2

Ingredients: 
  • 2 large (1 inch thick) pork chops, bone in
  • 1 large Granny Smith apple
  • 1 Sweet onion, sliced in rings
  • 3 tablespoons butter
  • salt and pepper

Method: 

In a 12" skillet over medium heat, melt 2 tablespoons of butter. Saute sage, apple slices and onion until caramelized. Remove apples and onions.Turn heat up to medium high. Add remaining butter. Salt and pepper pork chops. Sear pork chops 6-14 minutes on each side, depending on thickness and desired temperature.

6-8 minutes per side will bring the internal temperature to about 160° or medium doneness, ideal for flavor and advocated by the USDA.
10-14 minutes should bring the internal temperature up to 180° or well-done.
For better results cover meat for the last 10 minutes to trap as much moisture as possible.

Serve chops with apples and onions.
