Spicy Abita Root Beer Jerky

Makes 2 pounds

Ingredients: 
  • 1 cup Abita root beer
  • 1/3 cup soy sauce
  • 1/3 cup rice wine vinegar (not seasoned)
  • 1/4 cup Steen's cane syrup or honey
  • kosher salt
  • 2 chipotle chiles in adobo sauce, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 2 pounds boneless beef sirloin, trimmed of all fat, cut into 1/4-inch strips

Method: 

Bring first 4 ingredients plus 1 teaspoon salt to a simmer in a saucepan over medium heat. Cook until reduced to 1 cup. Remove from heat. Add chipotles, paprika and onion powder and stir. Cool completely.

Combine sirlion and root beer marinade in a zip top bag. Push out as much air as possible, seal and refrigerate at least over night and up to 3 days.  Drain meat, discard marinade and dry using a dehydrator according to manufacturer's instructions. Refrigerate in an air tight container for up to 2 weeks.
