Rule of Thumb for Fish Cooking Times

Figure on 8-9 minutes of cooking time total per inch of thickness if the fish is at room temperature. Bringing the fish up to temperature is important for even cooking; if you're putting it in the pan straight out of the fridge, increase that time about 10 minutes and be prepared for it to be more/less cooked in spots.
