What Are Shallots

Shallots are a member of the allium family whose other members are - not surprisingly - garlic and onions and lilies. They have a mild but complex flavor, come in individual cloves, similar to garlic but bigger. They are covered by a tan papery dried outer skin with semitranslucent white fleash often with a tinge of purple. They are best sauteed or roasted.
