Wondering What Condensed Milk Is?

Condensed milk is evaporated milk with a high proportion (40%) of cane sugar. Also called sweetened condensed milk it was developed in 1856 as a way of preserving whole milk without refrigeration. It has a syrupy consistency and is ivory in color. Often used in desserts and confections it thickens when combined with acidic fruit juice. Do not substitute evaporated milk in a recipe that calls for condensed milk.
