Because jalapeño "poppers" have become such a popular bar food, growers have bred them to be bigger and milder. The enormous versions you'll find at the grocery store these days just don't have much heat. Look for the smaller serrano pepper for a good kick, even smaller Thai chiles for an even bigger kick, and the bright orange habañero or Scotch bonnet for a fruity, super-big kick.
