  • 12 ounces lump crab meat, picked over for shells and cartilage 
  • 1 1/2 tablespoons olive oil
  • 1 1/2 tablespoons butter
  • 1 cup flat leaf parsley, coarsely chopped, plus more for garnish
  • 2 teaspoons garlic, minced
  • 1 lb ripe tomatoes, chopped
  • 1/3 cup dry white wine
  • 1 pound linguine, fresh or dried

Course: 

For the lamb stuffing:

  • ​2 pounds lamb shoulder or shanks
  • salt
  • ​freshly ground black pepper
  • ​1 teaspoon dried thyme
  • ​1 teaspoon crushed red pepper flakes
  • ​2 tablespoons extra-virgin olive oil
  • 1 onion, diced
  • ​3 cloves garlic, sliced
  • ​2 tomatoes, peeled and diced, or 1 cup canned diced tomatoes
  • ​1 sprig fresh rosemary
  • 2 cups Basic Chicken Stock

 

​For the Leg of Lamb

  • ​1 5-pound deboned and butterflied leg of lamb
  • salt
  • ​freshly ground black pepper
  • ​4 cloves garlic, sliced
  • ​2 branches fresh rosemary, divided into small sprigs
