Course: 
  • 1/4 cup golden raisins
  • 1 head caulifower (about 2 lbs)
  • 1/4 cup pine nuts
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme, chopped (if dry use 1/2 tsp.)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter
  • 1 large garlic clove, pressed or minced
  • 1/4 cup panko (Japanese breadcrumbs)

Bread Pudding

  • 6 slices day old French or Italian Bread
  • 2 tablespoons plus 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 4 eggs
  • 2 cups milk
  • 2 tablespoons melted butter
  • 1/2 cup seedless raisins
  • 1 teaspoon vanilla extract

 

Rum Sauce

  • 2 cups milk
  • 1/2 stick butter
  • 1/2 cup sugar
  • 1 tablespoon nutmeg
  • 1 tablespoon vanilla extract
  • Rum to taste
  • 1 tablespoon oil
  • 2 tablespoon flour

  • 2 cups flour
  • 2 eggs
  • 2 teaspoons baking powder
  • ½ cup heavy cream
  • ½ teaspoon salt
  • ½ cup sugar
  • 1/3 cup butter

Sugarplum Mixture

  • Combine 2 tablespoons golden raisins
  • 2 tablespoons chopped dates
  • 2 tablespoons chopped figs
  • ¼ cup chopped dried apricots
  • 2 tablespoons each of chopped pecans
  • almonds and walnuts. (Soaking 1 week in 2 tablespoons brandy is optional).
