Caribbean Turkey Rub

Makes 1/4 cup for 12 to 14 lb turkey

  • 1 tablespoon paprika
  • 1 tablespoon onion powder
  • 2 teaspoons mustard seed, crushed
  • 1½ teaspoons cracked black pepper
  • teaspoons garlic powder
  • 1 teaspoon salt
  • 1 teaspoon ground ginger 
  • 1/2 teaspoon ground allspice

Caribbean Turkey Rub

Combine ingredients in a small bowl. Rub on turkey. Cover and refrigerate about 8 hours before roasting.

Note: Mix ingredients together and rub over the entire surface of the turkey, inside and out. Do your best to work the rub in under the skin. Let sit for minimum 2 hours refrigerated.
