Divide the meat into four portions and shape into round patties. Sprinkle the bottom of a cast iron skillet with salt and heat until searingly hot. Add patties and sear well on each side.
Reduce heat and cook patties until degree of doneness is achieved (rare, medium, well). Takes 3 minutes or more.
Remove patties from skillet, sprinkle each with salt and pepper and place 1 tablespoon of butter on top of each.
Transfer each hamburger to a bun and cover with lemon juice, Worcestshire and Tabasco (to taste).
Finish with a sprinkle of parsley.
