Crawfish Pumpkin Soup

Serves 6 to 8

Ingredients: 
  • 1 onion, chopped
  • 1 (15 oz) can pumpkin puree
  • 4 cups chicken broth
  • 1/2 cup half-and-half
  • 16 oz crawfish tails, drained and rinsed
  • nutmeg, dash
  • salt and pepper to taste
  • 1/4 cup green onions, chopped for garnish

Method: 

Add a tablesppon or two fo olive oil to  a pot  and saute onion over medium heat until tender, about 5 minutes. Stir in the pumpkin and chicken both and bring to a boil. Reduce heat and simmer for about 10 minutes. Add cream, crawfish and nutmeg. Season with salt and pepper to taste.

Cook over low heat for additional 10 minutes. Serve garnished wit green onion.
