Gateau Sirop (Syrup Cake)

Serves 24 muffins

  • 1 cup peanut oil
  • 1 cup brown sugar
  • 1 cup Steen's cane syrup
  • 1/3 cup molasses
  • 4 eggs
  • 2 tablespoons vanilla extract
  • 1 cup boiling water
  • 2 teaspoons baking soda
  • 2 cups sifted all purpose flour
  • 2 teaspoons ground ginger
  • 2 teaspoons. ground cloves
  • 2 teaspoons ground cinnamon
  • 3/4 cup chopped pecans (optional)

Preheat oven to 350˚F.
Beat oil, brown sugar, syrup, molasses, eggs and vanilla in mixing bowl. Combine boiling water with baking soda and add to syrup mixture.
In a separate bowl, combine flour, ginger, cloves and cinnamon. Gradually add liquid to flour mixture, a little at a time, until well mixed. Bake in greased cup cake pans, filled 2/3 full, for 15 minutes.
Remove from oven and sprinkle with chopped pecans.
Return to oven and bake until a toothpick inserted in the center comes out clean. (approximately 5 minutes).
