Mediterranean Turkey Rub

Serves 14 to 16 lb turkey

  • tablespoon snipped fresh Italian (flat-leaf) parsley
  • tablespoon snipped fresh oregano
  • tablespoon snipped fresh chives
  • tablespoon paprika
  • tablespoon onion powder
  • 1½ teaspoons cracked black pepper
  • 1½ teaspoons garlic powder
  • teaspoon salt
  • Olive oil

Mediterranean Turkey Rub

In a bowl combine dry ingredients with enough olive oil to form a paste. Rub onto turkey. Cover and chill about 8 hours before roasting.

Note: For best results, mix ingredients together and rub over the entire surface of the turkey, inside and out. Do your best to work the rub in under the skin. Let sit for about 2 hours.
