Middle Eastern Spinach With Yogurt And Walnuts

Serves 4

Ingredients: 
  • 2 lbs flat leaf spinach, washed and heavy stems trimmed
  • 1 cup high-quality whole milk yogurt, greek is best
  • 2 or 3 large garlic cloves, mashed with 1/2 teaspoon salt
  • 2 tablespoons extr virgin olive oil
  • 1 teaspoon freshly ground coriander seeds
  • 1/8 teaspoon freshly ground allspice
  • 1/8 teasppon freshly grated nutmeg
  • 1/8 teasppon freshly ground cardamom seeds
  • 1/8 teaspoon freshly ground cloves
  • 1/8 teaspoon ground cinnamon
  • salt and frehly ground black pepper
  • 1/3 cup walnuts, chopped, pine nuts may be substituted

Method: 

In a large saucepan, place the spinach, with only the water from its last rinsing adhering to it. Cover and cook over medium-high heat until spinach wilts, about 5 minutes. Drain in colander, pushing out excess water with the back of a wooden spoon.

In a small bowl, stir together the yogurt and garlic salt mixture. Set aside.

In a medium skillet, heat the olive oil over medium-high heat. Add the spinach, all the spices and salt and pepper to taste. Cook, stirring ocassionally, until heated through, about 5 minutes. Transfer spinach to a serving platter, spoon several dollops of yougurt mixture over it and sprinkle wit walnuts.

Serve immediately with flatbread (pita bread)
