Shrimp Fried Rice With Bok Choy

Serves 4

Ingredients: 
  • 3 cups brown rice, cooked
  • ​2 tablespoons sesame oil
  • ​2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • ​1 tablespoon fresh ginger, grated
  • ​1 lb shrimp(small shrimp are best), peeled & de-veined
  • ​4 cups bok choy
  • ​1 cup snow pea pods, chopped
  • ​1/2 cup water chesnuts, diced
  • ​1 cup carrot, shredded

Method: 

Sauté the first five ingredients for 3 to 5 minutes, stirring occasionally to coat all the rice. Add the remaining ingredients and cook for 5 more minutes until the shrimp are pink and the vegetables are crisp-tender.

​Note: If you like your vegetables softer put them in first and cook for 2 or 3 minutes before you add your shrimp. Then add shrimp and cook until done.
