Sofrito

Makes about 2½ cups

Ingredients: 
  • 1 large yellow onion, roughly chopped

    10 garlic cloves, roughly chopped

    1 large red bell pepper, roughly chopped

    3 cubanelle or banana peppers, roughly chopped

    1 bunch cilantro, roughly chopped

Method: 

Combine the onion, garlic, peppers, and cilantro in a food processor and blend until you get a loose, smooth puree. Sofrito cna be kept in an airtight container in the fridge for up to 1 week, or freeze it in small portions for up to 3 months.
