Spicy Pasta, Bean And Sausage Soup

Serves 4 to 6

Ingredients: 
  • 2 (15oz) cans garbanzo beans, undrained
  • 2 tablepoons olive oil
  • 1 lb hot Italian sausage, casings removed
  • 4 teaspoons fresh rosemary, chopped
  • 2 large garlic cloves, chopped
  • 1/4 teaspoon dried crushed red pepper
  • 1/4 cup tomato paste
  • 5 cups low-salt chicken broth
  • 8 ounces (about 2 1/3 cups) orecchiette pasta (little ear shaped or other small pasta)
  • 1½ cups Romano cheese freshly grated

Note: For a milder soup use sweet Italian sausage, rather than hot.

Method: 

Strain liquid from canned beans into blender. Add 1 cup of beans and puree until smooth . Heat oil in a large pot over medium heat. Add sausage, rosemary, garlic and crushed red pepper. Saute until sausage is cooked through, breaking up with fork, about 8 minutes. Mix in the tomato paste. Add bean puree, remaining whole beans, broth and pasta. Simmer until pasta is tender and mixture is thick, stirring occasionally, about 30 minutes. Mix in 1/4 cup Romano cheese. Season to taste with salt and pepper.

Serve passing remaining cheese separately.
