Chicken

  • 1 (4-pound) chicken, cut into pieces
  • salt, black pepper, and cayenne
  • 1 cup all-purpose flour
  • 1⁄2 cup vegetable oil
  • 1 large onion, chopped
  • 1 small bell pepper, chopped
  • 1 large garlic clove, minced
  • 1 tablespoon prepared dark roux (or make your own)
  • 2  cups chicken broth
  • salt, pepper, and/or Cajun seasoning
