I am looking forward to the Great American Seafood Cookoff taking place on Saturday during the Louisiana Restaurant Association's annual Foodservice & Hospitality Expo here in New Orleans -- good luck to Chef Michael Brewer! Sunday, that stage is turned over to 4-H teams from Texas, Louisiana, Mississippi, South Carolina, and Arkansas; they will also be preparing dishes featuring seafood. I am acting as co-MC, and looking forward to some creative, innovative dishes. If you're attending the expo, look me up; I'd love to say hello.

These chops need to be brined for a full 24 hours; after that, they cook in about 15 minutes, most of that in the oven. Turn on the exhaust fan and cover the smoke detector, because they're going to generate some smoke for the brief time they're on the stovetop.

Use any white firm-fleshed fish for this recipe; the fish is cut into strips, then battered and fried. Make a fresh salsa using your favorite ingredients; serve with lots of lime and extra hot sauce.
