September 4, 2014

We are putting the finishing touches on our recipe list for our holiday issue and my mouth is watering. I've got nieces and nephews bringing great nieces and nephews over to help decorate gingerbread men this weekend. There was so much fudge in my kitchen a couple of weeks ago we couldn't give it all away -- so much, in fact, we finally gave up eating it. There are still a few bites left.

From hors d'oeurves to dessert, and a little bit of everything in between, we've got what you need to put a bit of Louisiana on your table over the entire holiday season. Cue the Christmas music!

Last week I asked you to go vote for the Louisiana Seafood Festival for USA Today's Top Ten Food Festivals in America; thanks to your help it finished up at number 6 on the list. Not bad; it's only been around for 7 years. Earlier this week they announced the food and music lineup for the event in October; details here, mark your calendars.

It's Festival Season! We have more festivals in Louisiana than there are days in the year, and September is starting to get busy. We've updated our events list with lots of new listings; check it out here and plan your upcoming weekends. Email Jim if there's something you know of that isn't listed.

NOTICE: Folse and Tramonto's Seafood R’evolution will host job fairs in Ridgeland,MS on Monday, September 8 and Monday, September 15 with the anticipation of filling between 130 – 150 positions. Enjoy this week's recipes, share them with family and friends, and, as always, let me know what's on your mind

Donald Link's Cajun Macaroni Salad

Donald Link's Cajun Macaroni Salad

From Chef Donald Link's fantastic new cookbook, Down South, this salad has all the makings of potato salad, without the work of peeling, dicing, and boiling potatoes. If you've got a pot big enough to cook two pounds of pasta instead of just one, it can easily be doubled — delicious, inexpensive side dish for any tail gate, pot luck, or simple weeknight dinner. Plus you probably have all the ingredients in your pantry right now.

Spicy Glazed Chicken

Spicy Glazed Chicken

What's not to like about a recipe that has two ingredients plus salt and pepper, costs less than $1.00 per serving, and can be prepared in about half an hour? This recipe first appeared in the September/October 2013 edition of Louisiana Kitchen & Culture.

Cornbread spiced sauteed shrimp

Sautéed Shrimp over Jalapeño Cornbread

There are three parts to this recipe; the compound butter needs to be made in advance so that flavors meld, but everthing else comes together quickly. One reader comments that her husband and daughter gave this 4 stars and declared it a keeper- make it, and let us know what you think.
