Course: 

For the lamb stuffing:

  • ​2 pounds lamb shoulder or shanks
  • salt
  • ​freshly ground black pepper
  • ​1 teaspoon dried thyme
  • ​1 teaspoon crushed red pepper flakes
  • ​2 tablespoons extra-virgin olive oil
