Lt. Governor Jay Dardenne invited me and a host of others involved in Louisiana's tourism industry to Baton Rouge earlier this week for some “good news” about the state of the industry. Results from a University of New Orleans study are in, and 2012 was a record-breaking year for us, even going back to pre-Katrina highs: 26.3 million visitors spent $10.7 billion, which generated $665 million in state tax revenue. The increase in tourism also added 8,000 jobs to the economy. I know many of you contributed to those outstanding stats, so thanks very much for visiting, tell your friends what a great time you had, and come back soon! We love our tourists.

Appealing to kids but sophisticated enough for a passed hors d'oeurve, this recipe can be pulled together up to the point of frying the corn dogs as far as six hours in advance. Most of the work is done with a food processor, another advantage if you're strapped for time.

I've read that what is now the warehouse and central business district of New Orleans used to be covered in artichoke farms. Today, I harvest them from Rouses, where I spotted them for less than $1.00 apiece earlier this week. This is one of my favorite preparations, and it couldn't be much easier.

Shrimp Scampi

Shrimp Scampi

For this recipe, you first make a compound butter seasoned with garlic, lemon, green onions, and some white wine. Use that to butter a baking dish; cover with a layer of shrimp, add more of the butter, and bake until the shrimp are done. Thicken the pan juices a bit, cook some pasta, toss it all together, and enjoy. Diet tomorrow.
