Baked Potato Bites

Ingredients:

Method:
Preheat oven to 350°F.
Toss potatoes with oil; sprinkle with salt and pepper. Spread on rimmed baking sheets, leaving room for air to circulate, and bake for 45 - 50 minutes or until potatoes are soft.
To serve, cut an X in the top of each potato; gently pinch sides to open up and break up potato. Top with whatever suits your fancy.
Note: Potatoes can be kept warm in a crock pot or heated chafing dish; skin will not stay crispy.
