Green Tomato Relish

Serves 4

  • 2 large red or green tomatoes, preferably Creole, finely chopped
  • 1 red onion, finely chopped
  • 1 small red bell pepper, seeded, finely chopped
  • 1½ teaspoons salt
  • 1 cup white wine vinegar
  • 2 cloves garlic, minced
  • Louisiana-style hot sauce



Combine all ingredients in a saucepot over medium-high heat. Bring to a low boil and simmer 2 minutes, stirring constantly. Remove from heat and let stand 30 minutes. Strain through a fine wire-mesh strainer; discard liquid. Taste; adjust seasoning with salt and hot sauce. Allow to cool.

Cover and chill until needed, preferably overnight.
