Spicy Glazed Drumsticks
Recipe courtesy of Louisiana Kitchen & Culture, Sept/Oct 2013
Serves 6
Preheat broiler to high.
Season chicken to taste with salt and pepper. Space the chicken evenly on a foil-lined baking pan. Place pan under broiler about 8 inches from heat and cook, turning from time to time to prevent burning, for about 20 minutes until chicken is almost done.
Combine pepper jelly with about 2 tablespoons hot water to make a spreadable glaze. Brush one side of chicken with thin layer of glaze. Broil 2 to 3 minutes until lightly browned; turn, add another layer of glaze and broil until lightly browned. Repeat, adding additional glaze each time, until chicken is done and browned on all sides. Serve at once.
