Sweet Potato Biscuits

Makes 10 to 12

Ingredients: 
  • 2 medium sweet potatoes (1 cup)
  • 1 1/4 cups unbleached all purpose flour
  • 3 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 2/3 cup whole milk
  • 4 tablespoons unsalted btter (1/2 stick)

Method: 

Preheat oven to 450˚F

Bake and mash the sweet potatoes (use a fork to mash). In a bowl mix the sweet potato, milk and butter. Sift the dry ingredients together in a large mixing bowl. Add the dry ingredients to mashed sweet potato wet mixture.  Gradually mix until the ingredients are evenly dampened and a soft dough is formed.

Drop dough by tablespoon fulls on a baking sheet. Place them about 2 inches apart on an ungreased baking sheet.

Bake in oven for 12 to 15 minutes or until biscuits are lightly brown on top and appear flaky.
Cool slightly on a rack. Serve warm with butter.
