Sweet Potato Pone

Serves 6 to 8

  • 1 egg
  • 1 cup sugar
  • 1 stick (8 tablespoons) salted butter or margarine, softened
  • 2 cups peeled, grated raw sweet potatoes
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 cup chopped pecans

Preheat the oven to 325°F.

Beat the egg with the sugar and butter in a mixing bowl until creamy and smooth.

In another bowl, combine the sweet potatoes, salt, and milk and mix well. Add the butter mixture to the potato mixture and mix well. Pour the mixture into lightly buttered baking dish and bake for 30 to 35 minutes.

Remove from the oven and sprinkle the top with the pecans. Return to the oven and bake for 30 minutes, or until the mixture sets slightly.
