Sour cream can be substituted for the Creole cream cheese if it is not available in your area.

  • 2 yellow onions, diced
  • 2 ounces chopped garlic

  • 12 ounces evaporated milk
  • 1 cup water
  • 1 large egg, lightly beaten
  • Salt and freshly ground white pepper
  • 1 whole chicken (about 3 1/2-pounds), rinsed, patted dry and cut into 8 pieces
  • 1/2 cup all-purpose flour
  • Chopped dill pickle, for garnish
  • 1 tablespoon garlic, finely chopped

  • 1 1/2 pounds turtle meat, trimmed of all sinew and cut into 1/4-inch cubes

  • 2 medium-size onions, chopped finely
  • 4 stalks celery, chopped fine
  • 2 medium-size green bell peppers, chopped finely
  • 1 1/2 tablespoons kosher salt, to taste
