Mulate's Crabmeat AuGratin

Method:
In a medium saucepan, melt butter over medium heat. Add onion; sauté for about 10 minutes. Add seasonings, then flour, while stirring constantly.
Add half-and-half and milk, and bring to a boil. Stir in 1 cup shredded cheese. When the cheese has melted, remove from heat. Add egg yolks; mix well. Fold in crabmeat. Put in buttered gratin dishes. Top each with cheese.
Bake gratins at 400˚F for about 15 minutes, or until cheese is melted and bubbly.
