Homemade Pimiento Cheese

Makes 2 cups

Ingredients: 
  • 1 cup mayonnaise
  • 1 teaspoon sage, finely chopped
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon dry mustard
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon Worcestershire sauce
  • 8 ounces Colby cheese, grated
  • 8 ounces sharp Cheddar, grated
  • 1 (4 ounce jar) pimientos, drained & chopped
  • salt & pepper to taste
  • hot pepper sauce to taste

Method: 

In a medium bowl with a rubber spatula, combine mayonnaise, sage, lemon juice, mustard, cayenne and Worcestershire sauce

Add the two cheeses and pimientos, blending thoroughly using your spatula. Season with salt, pepper and hot sauce to taste.

Refrigerate until ready to use.

Serve on bagel chips, stuffed into celery stalks or favorite crackers.

Note: You can substitute 1/4 cup chopped, roasted  red bell pepper. For extra kick, add 1 teaspoon diced pickled jalapeno or green chiles
