Hot Cheesy Beer Dip

Makes 2 cups

  • 1/4 cup green onion, finely chopped
  • ​1 clove garlic, minced
  • ​1/2 teaspoon dried tarragon, crushed
  • 1 tablespoon butter
  • ​1 teaspoon cornstarch
  • 3/4 cup beer
  • 2 cups cheddar cheese, shredded
  • 1 3-ounce package of cream cheese, cut up

In a saucepan cook onion, garlic and tarragon in butter. Stir in the cornstarch. Add beer all at once. Cook and stir until thickened and bubbly.

​Gradually add cheeses, stirring until melted.

​Serve with tortilla chips or bread cubes.
