• 1 cup flat leaf parsley, coarsely chopped
• 4 cloves garlic, coarsely chopped
• 4 green onions, white and green parts, lightly grilled

• 1 teaspoon black pepper
• 1 tablespoon dried tarragon or 2 tablespoons fresh

Green Goddess Dressing

• 12 pounds mayhaws, stems removed and halved
• 5 pounds cooking pears, quartered
• 5 to 6 cups (approximate) sugar

• 1/2 cup white wine
• 1 shallot, minced
• 1 sprig thyme
• 1 teaspoon whole black peppercorns
• 1 bay leaf
• 1 tablespoon white wine vinegar
• juice of 1/2 lemon
• 4 egg yolks
• 1 cup clarified unsalted butter (at 135˚-145˚F)
• pinch of cayenne pepper
• salt and Tabasco sauce to taste

Besh Basic Hollandaise Sauce

• 4 large or 6 medium Plaquemines Parish navel oranges
• 2 large Plaquemines Parish Meyer Lemons
• 11 cups water
• 4 pounds sugar

• 2 eggs
• 2 cloves garlic, minced
• 2 lemons, juiced
• 1 lemon zested
• 4 drops Tabasco
• 3 tablespoons Creole mustard
• 2 cups salad oil
• 1 pinch salt
• 1 Pinch black pepper

Sugar Pumpkins

• 2 1/2 lbs - 3 lbs of pumpkin yields the equivalent of a 15 oz can of Libbys

Note: The amount of liquid varies in whole pumpkins and can alter your results. You'll need to press out extra liquid to achieve the consistancy that you get right out of a can. See method.

This puree can be used in all your recipes calling for canned pumpkin(15 oz).
