Course: 

Shrimp and Crawfish Corn Dogs

  • 8 ounces medium shrimp, peeled and deveined
  • ​1/2 teaspoon kosher salt
  • 2 tablespoons heavy cream
  • 1 egg
  • ​2 dashes Worcestershire sauce
  • ​1/2 teaspoon hot pepper sauce
  • 3/4 teaspoon Cajun seasoning
  • 4 cups crawfish tails
  • 1/2 cup frozen corn, thawed
  • 1/2 cup green onions, thinly sliced
  • 1 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/4 teaspoon paprika
  • 1 teaspoon salt
  • 1 cup lager beer
  • peanut for frying

Spicy Mustard

  • 1/4 cup whole grain Dijon mustard
  • 1 cup mayonnaise
  • 3 tablespoons finely chopped fresh chives
  • 2 dashes of Worcestershie sauce
  • 2 dashes of hot pepper sauce
  • 2 teaspoons dry mustard
  • Salt and pepper to taste

Course: 
  • ​1 1-inch piece fresh ginger, grated
  • ​1 tablespoon Sriracha chili sauce (or favorite hot sauce)
  • ​2 tablespoons raw or brown sugar
  • ​2 tablespoons rice wine vinegar
  • ​1 tablespoon soy sauce
  • splash of sesame oil
  • ​3 tablespoons peanut or vegetable oil  
  • 1 medium head cabbage, shredded
  • ​2 carrots, shredded
  • 1 mango, diced
  • ​4 green onions, thinly sliced, green and white parts
  • ​2 tablespoons sesame seeds
  • ​1/2 cup fresh mint, chopped
  • ​1/2 cup fresh cilantro, chopped
  • ​1/2 cup honey-roasted peanuts, or plain salted 
  • ​1/2 cup fried garlic, scallions, or onions, optional

Course: 
 

  • 2 cups white navy beans, covered in water and soaked for 24 hours
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon orange zest, minced
  • 2 garlic cloves, minced
  • 1/2 teaspoon dry mustard
  • 2 tablespoons maple syrup or sorghum
  • 2 cups chicken stock
  • 6 slices bacon, cut into 3 inch lengths
  • 1/2 teaspoon salt, kosher preferred

Course: 
  • 1 cup fresh cut green beans or 1 cup frozen cut green beans
  • 1 lb. whole small red potatoes
  • 3/4 cup crumbled Feta cheese
  • 3/4 cup sliced black or green olives
  • 1/3 cup coarsely chopped green onion
  • 1/4 cup chopped red or green pepper
  • 2 tablespoons large capers, drained (optional)
  • 3/4 cup thinly sliced radishes

Dressing

  • 1/3 cup olive or salad oil
  • 2 tablespoons snipped fresh parsley or 2 teaspoons dried basil (crushed)
  • 1 tablespoon fresh snipped tarragon or 1 teaspoon dried (crushed)
  • 2 tablespoons white wine vinegar
  • 2 teaspoons lemon juice
  • 1 clove garlic, minced
  • 1/8 teaspoons ground red pepper
  • Dash of salt

  • 1 cup course ground or yellow mustard 
  • 1 egg white lightly beaten
  • 2 teaspoons Tabasco Pepper sauce
  • 1 1/2 lbs catfish fillets, cut into bite size strips
  • 1/2 cup yellow cornmeal
  • 1/2 cup all purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 quart vegetable oil
  • Cocktail Sauce, for serving (click here)

Course: 
  • 1/4 cup vegetable oil
  • 3 lbs lean beef chuck, trimmed cut into 1 inch cubes
  • 1 cup onions, chopped
  • 3 garlic cloves, minced
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons salt
  • 2 teaspoons Tabasco Pepper Sauce
  • 3 cups water
  • 4 ounce can chopped green chilies
  • cooked rice
  • chopped scallions, cheddar cheese, sour cream

  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 2 teaspoons white wine vinegar
  • 1 tablespoon fresh parsely, chopped
  • 1 tablespoon green oinons, chopped
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon Tabasco Sauce
  • 3 tablespoons crumbled blue cheese
  • salt and freshly ground pepper to taste

Note: This is a perfect dip for tailgate  and football parties. This recipe is easy to increase without fuss.
