As I write this Wednesday afternoon in the middle of a deluge, it's hard to believe anyone would want to get outside and grill, but our weather is supposed to be spectacular this weekend.

Just in time for Cinco de Mayo! It's my friend Colin's birthday; I wish we still lived close enough to each other to celebrate with a few margaritas. With that in mind, the recipes I've selected for inclusion this week will get you outside, cooking with a margarita in hand.

This is one of our favorites. Make the salsa, chop the garnish, and grill the peppers and onions while the steak is coming up to room temperature. If you put the steak in to marinate in the morning, this is an easy meal for a busy weeknight; not much more than 30 minutes hands-on time.

Shrimp Kebabs

The trick to crisp bacon without overcooked shrimp is to cook the bacon almost all the way first, then wrap the shrimp, skewer, and finish off on the grill. Sweet pineapple chunks set off the salty bacon; this is sure to be a summer favorite.

Watermelon Margarita

Watermelon Margarita

We had the bright idea to make simple syrup out of watermelon juice for a feature back in 2014; LKC contributor Wendy Waren stopped by, cocked her eyebrow at it, and said "let me go get my cocktail kit." Back in 10 minutes with an old fashioned doctor's bag full of cocktail gear, she worked on several versions before deciding this was the winner; all of us at the photo shoot generously offered to sample and offer our opinions on the various versions leading to this one. As if.
