The ninth annual Louisiana Seafood Cookoff competitors have been announced, and they come from all four corners of the state. The competition will take place on May 28, during the Saturday evening New Orleans Wine and Food Experience Grand Tastings. The winner will have the opportunity to represent Louisiana at various events around the country over the coming year. Good luck to all of you! I'll see you there.

I'm still putting together the list of recipes for the July/August edition of the magazine - I want Louisiana seafood on the grill for the Leisure Cooking feature, and fast, delicious ideas for dinner for the hot summer nights we'll be experiencing. If I select yours to publish, I'll send you a little lagniappe. Email me!

Festival International de Louisiane kicked off a weekend of international music, food, and arts and crafts yesterday in Lafayette; it will run through Sunday. The music lineup is spectacular this year. Should you find yourself in the Lafayette area, check it out!

There's lots more to do around the entire state; as you can see by the length of the Events Calendar below, festival season is in full swing! Find something to do this weekend, enjoy this week's recipes, share them with family and friends, and as always, let me know what's on your mind

This is easy, and just delicious. Make this compound butter in big batches and freeze it; next time it'll be even faster. Plus I'll bet you come up with numerous other uses for it.

California lays claim to this recipe, but it's loaded with delicious Louisiana seafood. It calls for crab and shrimp, which is divine, but if you only have one or the other on hand, double up! Plus, making your own salad dressing is always a good idea.

I love catfish, I grew up on it, but the only thing my mom ever did with it was fry it. I rarely think to use it in any other way. This is delicious; I guarantee you can't eat just one.
